  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 cup uncooked wild rice blend
  • 6 cups turkey or chicken broth
  • 2 cups cooked turkey, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup heavy cream or milk (optional)
  • 2 tablespoons flour + 2 tablespoons butter (for roux, optional)
  • Fresh parsley, for garnish

Instructions

  1. Sauté onions, carrots, and celery in olive oil until soft.
  2. Add garlic and cook briefly.
  3. Stir in wild rice, broth, thyme, and bay leaf. Bring to a boil.
  4. Reduce heat and simmer uncovered for 40–45 minutes, until rice is tender.
  5. Add shredded turkey and simmer for 5–10 more minutes.
  6. Optional: Add cream and roux to thicken the soup.
  7. Season with salt, pepper, and garnish with parsley.
