- 2 tablespoons olive oil or butter
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 cup uncooked wild rice blend
- 6 cups turkey or chicken broth
- 2 cups cooked turkey, shredded
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup heavy cream or milk (optional)
- 2 tablespoons flour + 2 tablespoons butter (for roux, optional)
- Fresh parsley, for garnish
Instructions
- Sauté onions, carrots, and celery in olive oil until soft.
- Add garlic and cook briefly.
- Stir in wild rice, broth, thyme, and bay leaf. Bring to a boil.
- Reduce heat and simmer uncovered for 40–45 minutes, until rice is tender.
- Add shredded turkey and simmer for 5–10 more minutes.
- Optional: Add cream and roux to thicken the soup.
- Season with salt, pepper, and garnish with parsley.
