Tomato Soup – Smooth, Savory & Pure Comfort

A warm, comforting bowl of homemade tomato soup made with fresh or canned tomatoes, herbs, and broth. Naturally dairy-free and perfect for pairing with grilled cheese or serving as a light meal.

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 68 fresh tomatoes (or 1 can 28 oz whole peeled tomatoes)
  • 2 cups vegetable broth
  • ½ tsp dried basil or thyme
  • Salt and black pepper, to taste
  • Optional: ½ cup coconut milk or cream for richness

Instructions

  1. Heat olive oil in a large pot. Sauté onions until translucent.
  2. Add garlic and cook 1 more minute.
  3. Stir in tomatoes and broth. Season with herbs, salt, and pepper.
  4. Simmer uncovered for 20–25 minutes.
  5. Blend until smooth using immersion blender or countertop blender.
  6. Stir in optional cream and adjust seasoning.
  7. Serve warm with toppings or sides of choice.
