- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 6–8 fresh tomatoes (or 1 can 28 oz whole peeled tomatoes)
- 2 cups vegetable broth
- ½ tsp dried basil or thyme
- Salt and black pepper, to taste
- Optional: ½ cup coconut milk or cream for richness
Instructions
- Heat olive oil in a large pot. Sauté onions until translucent.
- Add garlic and cook 1 more minute.
- Stir in tomatoes and broth. Season with herbs, salt, and pepper.
- Simmer uncovered for 20–25 minutes.
- Blend until smooth using immersion blender or countertop blender.
- Stir in optional cream and adjust seasoning.
- Serve warm with toppings or sides of choice.
