Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mash ripe bananas in a mixing bowl.
- Mix in melted butter, eggs, honey, and vanilla until smooth.
- Combine flour, baking soda, salt, and cinnamon in a separate bowl.
- Fold dry ingredients into the wet mixture, being careful not to overmix.
- Stir in Greek yogurt and optional mix-ins like walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
