- 1½ lbs boneless, skinless chicken thighs or breasts
- 2 cups cooked rice (white, brown, or cilantro-lime)
- 2 cups corn kernels (grilled, canned, or frozen and thawed)
- ¼ cup mayonnaise (or plain Greek yogurt)
- 1 clove garlic, minced
- 1 tbsp fresh lime juice
- ½ tsp chili powder
- ¼ cup cotija or feta cheese, crumbled
- 2 tbsp chopped cilantro
- Salt and black pepper, to taste
- Optional toppings: diced avocado, sliced jalapeños, pickled onions, hot sauce
Instructions
- Season chicken with salt, pepper, chili powder, and garlic. Grill or pan-sear until cooked through; let rest, then slice.
- Mix corn with mayo, lime juice, garlic, chili powder, cotija, and cilantro to make the street corn topping.
- Cook rice and season with lime juice and cilantro if desired.
- Assemble bowls with rice, chicken slices, and street corn topping. Add optional garnishes like avocado or hot sauce.
- Serve immediately or store components separately for meal prep.
