Seafood Salad – Light, Flavorful & Easy to Make

This light and zesty Seafood Salad features tender shrimp, imitation crab, crisp vegetables, and a lemon-herb dressing. It’s easy to make, protein-packed, and perfect for warm weather, entertaining, or meal prep.

Ingredients

  • 1 cup cooked shrimp
  • 1 cup imitation crab, chopped
  • ½ cup celery, diced
  • ½ cup cucumber, chopped
  • ¼ cup red onion, thinly sliced
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh dill (or parsley)
  • Salt and pepper to taste

Instructions

  1. Steam or boil shrimp (and scallops, if using) until just tender. Chill.
  2. Dice celery, cucumber, onion, and herbs.
  3. In a large bowl, combine seafood, veggies, lemon juice, olive oil, and herbs.
  4. Season with salt and pepper to taste.
  5. Chill for 30 minutes before serving for best flavor.
