Ingredients

- 1 cup cooked shrimp
- 1 cup imitation crab, chopped
- ½ cup celery, diced
- ½ cup cucumber, chopped
- ¼ cup red onion, thinly sliced
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp chopped fresh dill (or parsley)
- Salt and pepper to taste
Instructions
- Steam or boil shrimp (and scallops, if using) until just tender. Chill.
- Dice celery, cucumber, onion, and herbs.
- In a large bowl, combine seafood, veggies, lemon juice, olive oil, and herbs.
- Season with salt and pepper to taste.
- Chill for 30 minutes before serving for best flavor.
