- 2 lbs Yukon Gold potatoes (or red potatoes)
- ½ cup mayonnaise (or Greek yogurt for a healthier option)
- 1 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- ½ cup diced celery
- ½ cup finely chopped red onion
- ¼ cup chopped pickles
- 2 tbsp fresh dill (or parsley)
- Salt and black pepper to taste
Instructions
- Boil the Potatoes – Place whole potatoes in a pot of salted water. Boil for 15 minutes, then drain and let cool before peeling and chopping.
- Prepare the Dressing – In a bowl, whisk together mayonnaise, mustard, vinegar, salt, and pepper.
- Combine Everything – Mix potatoes, celery, onions, and pickles in a large bowl. Gently fold in the dressing.
- Chill & Serve – Refrigerate for at least 1 hour before serving. Garnish with fresh herbs and enjoy!
