Meringue Cookies Recipe – Light, Crispy, and Easy to Make at Home

These airy, crisp meringue cookies are made with just egg whites and sugar. Naturally gluten-free, low-fat, and perfect for decorating or gifting.

  • 4 large egg whites (room temperature)
  • 1 cup superfine sugar (or regular sugar, finely blended)
  • ¼ teaspoon cream of tartar (or 1 tsp lemon juice)
  • ½ teaspoon vanilla extract
  • Optional: gel-based food coloring, cocoa powder, peppermint or almond extract, sprinkles, mini chocolate chips

Instructions

  1. Preheat oven to 200°F (93°C). Line baking sheets with parchment or silicone mats.
  2. Beat egg whites until foamy. Add cream of tartar.
  3. Gradually add sugar, 1 tbsp at a time, beating until stiff glossy peaks form.
  4. Fold in vanilla and optional flavorings or color.
  5. Transfer to piping bag and pipe 1-inch rounds onto baking sheets.
  6. Bake for 1.5 to 2 hours until dry.
  7. Turn off oven, leave cookies inside for 1 more hour.
  8. Let cool completely before serving or storing.
