- 4 large egg whites (room temperature)
- 1 cup superfine sugar (or regular sugar, finely blended)
- ¼ teaspoon cream of tartar (or 1 tsp lemon juice)
- ½ teaspoon vanilla extract
- Optional: gel-based food coloring, cocoa powder, peppermint or almond extract, sprinkles, mini chocolate chips
Instructions
- Preheat oven to 200°F (93°C). Line baking sheets with parchment or silicone mats.
- Beat egg whites until foamy. Add cream of tartar.
- Gradually add sugar, 1 tbsp at a time, beating until stiff glossy peaks form.
- Fold in vanilla and optional flavorings or color.
- Transfer to piping bag and pipe 1-inch rounds onto baking sheets.
- Bake for 1.5 to 2 hours until dry.
- Turn off oven, leave cookies inside for 1 more hour.
- Let cool completely before serving or storing.
