  • 1 lb lean ground beef (90% or higher)
  • 1 tbsp olive oil (plus more if needed)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 2 cups fresh spinach (or Swiss chard, kale)
  • 2 green onions, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Optional: red pepper flakes, crumbled feta, sun-dried tomatoes, olives

Instructions

  1. Heat olive oil in a skillet and sauté cherry tomatoes and bell pepper until blistered; set aside.
  2. In the same skillet, cook garlic for 30 seconds, then add ground beef and oregano. Brown until cooked through.
  3. Stir in spinach and cook until wilted.
  4. Return tomatoes and peppers to the pan, then stir in green onion.
  5. Adjust seasoning and add optional toppings as desired.
  6. Serve warm over grains, with pita, or in bowls.
