- 1 lb lean ground beef (90% or higher)
- 1 tbsp olive oil (plus more if needed)
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 2 cups fresh spinach (or Swiss chard, kale)
- 2 green onions, chopped
- 1 tsp dried oregano
- Salt and pepper to taste
- Optional: red pepper flakes, crumbled feta, sun-dried tomatoes, olives
Instructions
- Heat olive oil in a skillet and sauté cherry tomatoes and bell pepper until blistered; set aside.
- In the same skillet, cook garlic for 30 seconds, then add ground beef and oregano. Brown until cooked through.
- Stir in spinach and cook until wilted.
- Return tomatoes and peppers to the pan, then stir in green onion.
- Adjust seasoning and add optional toppings as desired.
- Serve warm over grains, with pita, or in bowls.
