- Freshly grated carrots

Instructions
- Preheat oven to 350°F (175°C) and grease a baking pan.
- Mix dry ingredients (flour, spices, baking powder, baking soda) in one bowl.
- Whisk eggs, sugars, oil, and vanilla in another bowl.
- Combine wet and dry ingredients, then fold in grated carrots.
- Pour batter into the pan and bake for 30-35 minutes.
- Cool completely before frosting.
- Prepare frosting by beating cream cheese, butter, powdered sugar, and vanilla.
- Spread frosting over the cooled cake and serve!
