Ingredients

  • Freshly grated carrots
  • All-purpose flour
  • Granulated & brown sugar
  • Eggs
  • Vegetable oil
  • Baking powder & baking soda
  • Cinnamon & nutmeg
  • Vanilla extract
  • Cream cheese
  • Butter
  • Powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. Mix dry ingredients (flour, spices, baking powder, baking soda) in one bowl.
  3. Whisk eggs, sugars, oil, and vanilla in another bowl.
  4. Combine wet and dry ingredients, then fold in grated carrots.
  5. Pour batter into the pan and bake for 30-35 minutes.
  6. Cool completely before frosting.
  7. Prepare frosting by beating cream cheese, butter, powdered sugar, and vanilla.
  8. Spread frosting over the cooled cake and serve!
