- 1 cup lentils (brown, green, or red)
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- ½ tsp ground turmeric
- 1 tsp paprika
- 1 bay leaf
- 6 cups vegetable broth
- Salt and pepper to taste
- Juice of ½ lemon
- Fresh parsley or cilantro, for garnish
Instructions
- Heat olive oil in a large pot. Sauté onion, carrot, and celery for 5–7 minutes.
- Add garlic, spices, and tomato paste. Cook until fragrant.
- Stir in lentils, broth, and bay leaf. Bring to a boil.
- Simmer for 25–35 minutes until lentils are tender.
- Optional: Blend half the soup for a creamy texture.
- Stir in lemon juice, season, and garnish before serving.
