Lentil Soup – Hearty, Healthy & Naturally Plant-Based

This cozy and nourishing lentil soup is loaded with protein, fiber, and warm spices. A one-pot wonder that’s easy to make, great for meal prep, and adaptable to any diet.

Ingredients

  • 1 cup lentils (brown, green, or red)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • ½ tsp ground turmeric
  • 1 tsp paprika
  • 1 bay leaf
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Juice of ½ lemon
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot. Sauté onion, carrot, and celery for 5–7 minutes.
  2. Add garlic, spices, and tomato paste. Cook until fragrant.
  3. Stir in lentils, broth, and bay leaf. Bring to a boil.
  4. Simmer for 25–35 minutes until lentils are tender.
  5. Optional: Blend half the soup for a creamy texture.
  6. Stir in lemon juice, season, and garnish before serving.
