  • 2 cloves garlic, minced
  • Salt & black pepper to taste

For the Pineapple Mango Salsa:

  • 1 cup fresh pineapple, diced
  • 1 cup ripe mango, diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, minced (optional)
  • Juice of 1 lime
  • 2 tbsp chopped fresh cilantro
  • Pinch of salt

Instructions

  1. Marinate the Chicken: Mix all marinade ingredients and coat the chicken. Chill for 30 minutes to 2 hours.
  2. Make the Salsa: Combine pineapple, mango, red onion, jalapeño, lime juice, cilantro, and salt in a bowl. Chill.
  3. Cook the Chicken: Grill, bake, or pan-sear chicken until golden and fully cooked.
  4. Serve: Slice chicken and top with pineapple mango salsa. Garnish with cilantro and lime wedges.
