For the Chicken Marinade:
- 4 boneless skinless chicken breasts
- 2 tbsp fresh grated ginger
- Zest and juice of 2 lemons
- 2 tbsp honey or agave syrup
- 1 tbsp soy sauce or coconut aminos
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt & black pepper to taste
For the Pineapple Mango Salsa:
- 1 cup fresh pineapple, diced
- 1 cup ripe mango, diced
- ¼ cup red onion, finely chopped
- 1 small jalapeño, minced (optional)
- Juice of 1 lime
- 2 tbsp chopped fresh cilantro
- Pinch of salt
Instructions
- Marinate the Chicken: Mix all marinade ingredients and coat the chicken. Chill for 30 minutes to 2 hours.
- Make the Salsa: Combine pineapple, mango, red onion, jalapeño, lime juice, cilantro, and salt in a bowl. Chill.
- Cook the Chicken: Grill, bake, or pan-sear chicken until golden and fully cooked.
- Serve: Slice chicken and top with pineapple mango salsa. Garnish with cilantro and lime wedges.
