- 2 tbsp olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chopped kale (curly or lacinato)
- 1½ cups cooked white beans (or 1 can, drained)
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- 1 tbsp lemon juice (optional)
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat olive oil and sauté onion, garlic, carrots, and celery until soft.
- Stir in beans, broth, thyme, bay leaf, salt, and pepper.
- Simmer for 20–25 minutes to develop flavor.
- Blend half the soup for creaminess, if desired.
- Add chopped kale and cook until tender (5–10 minutes).
- Stir in lemon juice, adjust seasoning, and serve hot.
