Ingredients

  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chopped kale (curly or lacinato)
  • 1½ cups cooked white beans (or 1 can, drained)
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 tbsp lemon juice (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat olive oil and sauté onion, garlic, carrots, and celery until soft.
  2. Stir in beans, broth, thyme, bay leaf, salt, and pepper.
  3. Simmer for 20–25 minutes to develop flavor.
  4. Blend half the soup for creaminess, if desired.
  5. Add chopped kale and cook until tender (5–10 minutes).
  6. Stir in lemon juice, adjust seasoning, and serve hot.
