- 4 large Russet potatoes
- Cold water (for soaking)
- Neutral oil for frying (e.g., canola or vegetable oil)
- Sea salt (to taste)
- Optional: paprika, garlic powder, black pepper, or fresh herbs for seasoning
Instructions
- Peel (optional) and cut potatoes into even sticks (about ¼ inch thick).
- Soak cut potatoes in cold water for at least 30 minutes to remove excess starch.
- Drain and dry the potatoes thoroughly with a towel.
- Heat oil to 300°F (150°C) and fry potatoes in batches for 5–6 minutes (they should be soft but not browned).
- Remove and let rest on paper towels for 15–30 minutes.
- Increase oil to 375°F (190°C) and fry the potatoes again until golden and crispy (about 2–3 minutes).
- Drain, season immediately with salt, and serve hot!
