Ingredients

  • 4 large Russet potatoes
  • Cold water (for soaking)
  • Neutral oil for frying (e.g., canola or vegetable oil)
  • Sea salt (to taste)
  • Optional: paprika, garlic powder, black pepper, or fresh herbs for seasoning

Instructions

  1. Peel (optional) and cut potatoes into even sticks (about ¼ inch thick).
  2. Soak cut potatoes in cold water for at least 30 minutes to remove excess starch.
  3. Drain and dry the potatoes thoroughly with a towel.
  4. Heat oil to 300°F (150°C) and fry potatoes in batches for 5–6 minutes (they should be soft but not browned).
  5. Remove and let rest on paper towels for 15–30 minutes.
  6. Increase oil to 375°F (190°C) and fry the potatoes again until golden and crispy (about 2–3 minutes).
