  • ¼ cup natural sweetener
  • 1 teaspoon salt

Seasonings & Spices

  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ⅛ teaspoon allspice or cinnamon
  • Pinch of ground cloves (optional)

Instructions

  1. Prepare the Tomatoes : If using fresh tomatoes, blend them until smooth. For a quicker version, use tomato purée or tomato paste.
  2. Cook the Base : In a medium saucepan over medium heat, combine tomato purée, vinegar, and sweetener. Stir well and bring to a gentle simmer.
  3. Add the Seasonings : Stir in onion powder, garlic powder, smoked paprika, allspice, and cloves. Mix thoroughly and reduce heat to low.
  4. Simmer & Thicken : Cook on low heat for 30–40 minutes, stirring occasionally. The mixture should thicken and deepen in flavor.
  5. Blend & Store : For smooth ketchup, blend until silky. Transfer to sterilized glass jars and let cool before refrigerating.
