- 3–4 overripe bananas, mashed
- 1 cup crushed pineapple (with juice)
- ½ cup shredded coconut (sweetened or unsweetened)
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ½ cup brown sugar or white sugar
- 2 large eggs
- ½ cup melted butter or neutral oil
- 1 tsp vanilla extract
- ½ cup chopped macadamia nuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk mashed bananas, pineapple, eggs, melted butter, and vanilla.
- In another bowl, mix flour, baking soda, baking powder, salt, and sugar.
- Gently fold dry ingredients into the wet mixture.
- Stir in shredded coconut and macadamia nuts, if using.
- Pour batter into the loaf pan and bake for 55–65 minutes, until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
