  • 34 overripe bananas, mashed
  • 1 cup crushed pineapple (with juice)
  • ½ cup shredded coconut (sweetened or unsweetened)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup brown sugar or white sugar
  • 2 large eggs
  • ½ cup melted butter or neutral oil
  • 1 tsp vanilla extract
  • ½ cup chopped macadamia nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk mashed bananas, pineapple, eggs, melted butter, and vanilla.
  3. In another bowl, mix flour, baking soda, baking powder, salt, and sugar.
  4. Gently fold dry ingredients into the wet mixture.
  5. Stir in shredded coconut and macadamia nuts, if using.
  6. Pour batter into the loaf pan and bake for 55–65 minutes, until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
