Main Ingredients:
- 4 large ripe tomatoes, cut into wedges
- 1 cucumber, sliced into half-moons
- ½ red onion, thinly sliced
- 1 green bell pepper, sliced into strips
- ½ cup Kalamata olives
- 1 block feta cheese (about 200g)
- 3 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar (or lemon juice)
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Optional Additions:
Fresh basil or mint for extra freshness
Capers for a briny kick
Grilled chicken or shrimp for added protein
Instructions
- Prepare the Vegetables : Wash and cut the tomatoes into wedges. Slice the cucumber into half-moons. And thinly slice the red onion and green bell pepper.
- Assemble the Salad : In a large bowl, combine all the vegetables. Add Kalamata olives and place a block of feta cheese on top.
- Make the Dressing : In a small bowl, whisk together: Olive oil, Red wine vinegar (or lemon juice), Dried oregano, salt, and black pepper
- Toss & Serve : Drizzle the dressing over the salad and let it sit for 10 minutes. Serve fresh with warm pita bread or as a side dish.
