- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder (Dutch-processed or natural)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ⅔ cup sugar (white or brown)
- 2 eggs
- ½ cup neutral oil (vegetable, avocado, or melted coconut)
- 1 cup milk or yogurt (dairy or plant-based)
- 1 tsp vanilla extract
- ¾ cup chocolate chips (plus extra for topping)
Instructions
- Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
- In one bowl, whisk flour, cocoa powder, baking powder, baking soda, salt, and sugar.
- In another bowl, whisk eggs, milk/yogurt, oil, and vanilla until smooth.
- Pour wet ingredients into dry; stir gently until just combined.
- Fold in chocolate chips.
- Fill muffin cups ¾ full and top with extra chocolate chips.
- Bake for 18–22 minutes or until a toothpick comes out with moist crumbs.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
