  • ½ cup unsweetened cocoa powder (Dutch-processed or natural)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ⅔ cup sugar (white or brown)
  • 2 eggs
  • ½ cup neutral oil (vegetable, avocado, or melted coconut)
  • 1 cup milk or yogurt (dairy or plant-based)
  • 1 tsp vanilla extract
  • ¾ cup chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
  2. In one bowl, whisk flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. In another bowl, whisk eggs, milk/yogurt, oil, and vanilla until smooth.
  4. Pour wet ingredients into dry; stir gently until just combined.
  5. Fold in chocolate chips.
  6. Fill muffin cups ¾ full and top with extra chocolate chips.
  7. Bake for 18–22 minutes or until a toothpick comes out with moist crumbs.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
