- 1 lb ground beef
- 2 tbsp taco seasoning
- 1/4 cup water
- 1 jar salsa con queso (about 15 oz)
- 1 can condensed potato soup
- 1 1/4 cups sour cream
- 1 can fire-roasted diced green chiles
- 1 1/4 cups beef broth
- 1/2 cup chicken broth
- 1 cup frozen corn
- 1 cup black beans or pinto beans, drained and rinsed
Instructions
- In a large pot, brown the ground beef over medium heat. Drain any excess fat.
- Stir in taco seasoning and water. Simmer for 2–3 minutes.
- Add potato soup, queso, and sour cream. Stir until smooth.
- Pour in broths, green chiles, corn, and beans. Mix well.
- Simmer uncovered for 15–20 minutes, stirring occasionally, until thick and creamy.
- Serve hot with desired toppings: shredded cheese, avocado, tortilla strips, or cilantro.
