  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 1 jar salsa con queso (about 15 oz)
  • 1 can condensed potato soup
  • 1 1/4 cups sour cream
  • 1 can fire-roasted diced green chiles
  • 1 1/4 cups beef broth
  • 1/2 cup chicken broth
  • 1 cup frozen corn
  • 1 cup black beans or pinto beans, drained and rinsed

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Stir in taco seasoning and water. Simmer for 2–3 minutes.
  3. Add potato soup, queso, and sour cream. Stir until smooth.
  4. Pour in broths, green chiles, corn, and beans. Mix well.
  5. Simmer uncovered for 15–20 minutes, stirring occasionally, until thick and creamy.
  6. Serve hot with desired toppings: shredded cheese, avocado, tortilla strips, or cilantro.
