- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk (or heavy cream)
- 1 ½ cups shredded cheddar cheese
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- Pinch of paprika or cayenne (optional)
Instructions
- Melt butter in a saucepan over medium heat.
- Whisk in flour and cook for 1–2 minutes until lightly golden.
- Gradually pour in milk, whisking constantly to prevent lumps.
- Reduce heat to low, and slowly add shredded cheese by handfuls.
- Stir until fully melted and smooth.
- Season with salt, pepper, and optional spices.
- Serve warm over crispy fries, or as a dip!
