For the crepes:
- 1 cup all-purpose flour
- 1 1/4 cups milk
- 2 eggs
- 2 tbsp melted butter
- 1 tsp sugar
- Pinch of salt
For the cheese filling:
- 1 1/2 cups ricotta cheese or farmer cheese
- 1–2 tbsp sugar
- 1 egg yolk (optional)
- 1/2 tsp vanilla extract
- 1 tsp lemon zest
- Pinch of salt
Instructions
- Whisk crepe batter and let rest. Cook thin crepes in a nonstick skillet.
- Mix cheese filling ingredients until smooth.
- Place filling on each crepe, fold sides, and roll up.
- Pan-fry rolled blintzes in butter until golden and crisp.
- Serve warm with fruit compote, yogurt, or powdered sugar.
