- 1 large onion, chopped
- 2 large carrots, sliced
- 3 celery stalks, chopped
- 2 bell peppers (any color), chopped
- 1 medium head of cabbage, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1–2 cloves garlic, minced
Instructions
- In a large pot, sauté chopped onions, carrots, and celery for 5–7 minutes.
- Add garlic, bell peppers, and cabbage. Cook for another 5 minutes.
- Stir in diced tomatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer covered for 30–40 minutes, or until vegetables are tender.
- Season with salt, pepper, and optional herbs to taste.
- Let rest before serving. Enjoy hot or store for later.
