Ingredients

  • 1/2 cup brown sugar or coconut sugar
  • 1/2 cup wheat germ
  • 1 teaspoon ground cinnamon
  • 1 cup whole wheat flour
  • 2 large eggs (or flax eggs for vegan option)
  • 1/2 cup honey (or maple syrup for vegan)
  • 1/2 cup canola oil or coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup flax seeds
  • 1/4 cup sesame seeds
  • 1/4 cup sunflower seeds
  • Optional: 1/2 cup semi-sweet chocolate chips or dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine oats, sugar, wheat germ, cinnamon, flour, flax seeds, sesame seeds, and sunflower seeds.
  3. In another bowl, beat eggs (or flax eggs) and mix in honey, oil, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix until combined.
  5. Press the mixture firmly into the prepared baking dish.
  6. Bake for 25–30 minutes, or until golden brown.
  7. Allow to cool completely before slicing into bars.
