- 2 cups old-fashioned rolled oats
- 1/2 cup brown sugar or coconut sugar
- 1/2 cup wheat germ
- 1 teaspoon ground cinnamon
- 1 cup whole wheat flour
- 2 large eggs (or flax eggs for vegan option)
- 1/2 cup honey (or maple syrup for vegan)
- 1/2 cup canola oil or coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup flax seeds
- 1/4 cup sesame seeds
- 1/4 cup sunflower seeds
- Optional: 1/2 cup semi-sweet chocolate chips or dried cranberries
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine oats, sugar, wheat germ, cinnamon, flour, flax seeds, sesame seeds, and sunflower seeds.
- In another bowl, beat eggs (or flax eggs) and mix in honey, oil, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until combined.
- Press the mixture firmly into the prepared baking dish.
- Bake for 25–30 minutes, or until golden brown.
- Allow to cool completely before slicing into bars.
