Beef Egg Rolls: Crunchy on the Outside, Savory on the Inside

These crispy homemade beef egg rolls are packed with savory ground beef, crunchy vegetables, and bold flavor, perfect for air frying, baking, or pan-frying. Ideal for meal prep, parties, or a better-than-takeout snack!

Ingredients

  • 1 lb lean ground beef
  • 2 cups shredded red cabbage
  • 1 cup grated carrots
  • ½ medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp low-sodium soy sauce or tamari
  • 1 tsp sesame oil (optional)
  • ½ tsp ground ginger
  • 12 egg roll wrappers (gelatin-free)
  • Water or cornstarch slurry for sealing
  • Neutral oil (for brushing or shallow frying)
  • Optional Add-ins: mushrooms, chopped bell peppers, quinoa, green onions

Instructions

  1. In a skillet, cook ground beef until browned. Drain excess fat.
  2. Add onion, garlic, cabbage, and carrots. Sauté until softened.
  3. Stir in soy sauce, sesame oil, and ginger. Cook 1–2 minutes. Let cool.
  4. Lay out a wrapper, spoon in 2 tbsp filling, and roll tightly. Seal edges.
  5. Air fry at 400°F for 8–10 min OR
    Bake at 425°F for 12–15 min OR
    Pan-fry until golden and crisp on all sides.
  6. Serve with dipping sauce of choice.
