- 2 ripe bananas, mashed
- 1/2 cup melted butter (or coconut oil)
- 1/2 cup brown sugar (or coconut sugar)
- 1 egg (or flax egg)
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour (or almond/oat flour for GF)
- 1/2 tsp baking soda
- Pinch of salt
- 1/4 cup dairy-free chocolate chips
- Optional: chopped walnuts, cinnamon, shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 pan with parchment.
- Mash bananas in a large bowl.
- Add butter, sugar, egg, and vanilla. Whisk to combine.
- Fold in flour, baking soda, and salt until just mixed.
- Stir in chocolate chips and any extras.
- Spread batter into pan and smooth the top.
- Bake for 25–30 mins or until golden and set.
- Cool, slice, and enjoy!
