Ingredients
Scale
- 2 salmon fillets (skin-on or skinless)
- 1 bunch asparagus (trimmed)
- 2 tbsp olive oil (or melted butter)
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning (or fresh parsley, thyme, or dill)
- 1 tbsp grated Parmesan (optional)
- 1 tsp red pepper flakes (optional, for heat)
Instructions
- Prepare the Foil Packets: Preheat oven to 400°F (200°C). Cut two large sheets of aluminum foil to wrap the salmon individually.
- Season the Salmon & Asparagus: Place salmon fillets in the center of each foil sheet. Arrange asparagus spears alongside the salmon. Drizzle olive oil (or melted butter) over both. Sprinkle with garlic, lemon juice, salt, black pepper, and Italian seasoning. If using, add Parmesan and red pepper flakes for extra flavor.
- Wrap the Foil Packets: Fold the foil over the salmon and asparagus, sealing the edges tightly to prevent leaks.
- Bake the Salmon: Place foil packets on a baking sheet. Bake for 15-20 minutes until the salmon flakes easily with a fork. For crispy edges, open the foil in the last 5 minutes of baking.
- Serve & Enjoy: Open the foil carefully to release steam. Garnish with extra lemon slices and fresh herbs before serving.
