- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 large carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon ground ginger
- ½ teaspoon black pepper
- 6 cups chicken broth (homemade or low-sodium)
- 2 boneless chicken breasts (or 2 cups shredded chicken)
- Juice of ½ lemon (optional)
- Fresh parsley or cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté 2–3 minutes.
- Stir in turmeric, ginger, black pepper, carrots, and celery. Cook 5–7 minutes until softened.
- Add broth and chicken. Bring to a boil, then simmer 20–25 minutes (until chicken is cooked).
- Remove chicken, shred with forks, and return to pot.
- Add lemon juice, adjust seasoning, and garnish with fresh herbs.
- Serve hot and enjoy!
